Dairy Free Vegan Roasted Strawberry Coconut Ice Cream

  • 1 cup strawberries, roughly chopped
    •2 cans coconut milk
    •1/3 cup coconut nectar (vegan) or honey
    •1/2 tablespoon pure vanilla extract
    •1/2 an avocado
    •3-4 drops Peppermint essential oil
    •ice cream maker


Preheat oven to 400F. Spread out strawberries on baking sheet. Bake for 10 minutes and transfer to a cutting board. Dice finely and place in the refrigerator. Combine all other ingredients in a blender or mixer and combine. Pour into ice cream maker, adding the roasted strawberry 2 minutes before it finishes. Enjoy right away or transfer to the freezer to harden for 2 hours.
